Instructions
Preheat oven to 375°F
Pie crust. Using a food processor combine almond flour, erythritol, cold butter, cocoa powder, vanilla extract, baking powder, and salt. Add the egg and combine until well incorporated. Grease a 9-inch non-stick round cake pan with butter or cooking spray. Press the dough firmly into the bottom and up the sides of the cake pan to create a crust. Bake in a preheated oven for 10-15 mins.
Filling. In a large mixing bowl beat together cream cheese, heavy cream, erythritol, cocoa powder, chocolate, sour cream, and vanilla extract, using an electric mixer until fluffy.
When the chocolate pie crust has cooled, transfer the cream cheese filling to the pan and spread evenly. Refrigerate for at least 6 hours (or refrigerate pie overnight).
Topping. In a mixing bowl whip heavy cream, powdered erythritol, and vanilla extract until thickened.

FAQ ABOUT KETO FRENCH SILK PIE
What is the best type of flour to use for the pie crust?
It is better to use coconut or almond flour for the pie crust on a Keto diet. These types of flour are low in carbs.
How do you roll out a pie crust?
There is no need to roll out the dough, just press it firmly with your fingers (or with the back of a spoon) into the bottom and up the sides of the cake pan to create a crust.
How do you make a pie crust without shrinking it?
Usually, problems with crust shrinking happen if the crust contains all-purpose flour. We use almond flour, so the pie crust should not be shrunk.

Had anyone made this with stevia and find the best measurements of it? I don’t use erythritol in my diet and have t baked with stevia much

I made it with stevia and it was great. The whipping cream was gross (with stevia but I may have used too much) so I used 1TBSP frozen coco whip to cut thru the chocolate.
Can this be frozen?
