The best part about this dish is that it is baked and contains garlic, which is very healthy for our bodies. Garlic aids in blood purification and is very effective in weight loss. This delectable delicacy can be enjoyed at any time.
You all know my love for potatoes. I can never stop creating new recipes using potatoes. This is one of the dish which i came up with and it was a hit at home. I made this for my sister and she loved it with rasam made using my perimma's rasam powder.

This potato dish has tons of garlic flavour which i absolutely love.. And it is a spicy dish. I made this using baby potatoes, but you can use normal potatoes as well. Hope you will give this a try and let me know how it turned out for you.
Ingredients for Garlic Potato Roast
Baby Potatoes :
Baby potatoes are potatoes that have been removed from the ground before they have fully grown. potatoes have a sweeter flavour as a result of this. It has a pale brown thin outer skin and a creamy off white interior.
Dry Red Chillies :
Red chilies were introduced to India by Portuguese traders from Mexico. India is now the world leader in the cultivation of dry red chilies. Red chilies are more commonly consumed in hotter regions of India, such as Rajasthan, because they help to keep the blood clean and thin.

Ingredients
- Baby Potatoes - 15 If using big ones, peel and cube it
- Salt to taste
- Oil - 3 tblspn
- For grinding:
- Fennel Seeds / Saunf / Sombu - 2 tsp
- Dry Red Chillies - 3 to 4
- Garlic - 10 fat cloves
Instructions
Take potatoes in a pressure cooker, cover with water, add salt. Cover and pressure cook this for 3 whistle, simmer the flame and cook for another 5 mins. Turn off the heat and let the steam go all by itself. Drain it and let it cool down. Peel off the skin and set aside.
Take grinding ingredients in a blender and make it into a coarse puree.
Heat oil in a kadai. Add the ground masala. Mix well for a min.
Add in potatoes and salt.Toss well and keep cooking till it turns golden.
Serve.

add a good amount of salt |

Once it is cooked, drain it |

peel the skin off the potatoes..Set aside |

Take garlic in a blender |

Saute for a min or so |

Keep cooking..I found that the potatoes were a little too big for me, so i used a knife and cut it in half right in the kadai itself |

Now the potatoes are bite size, so it gets roast and crispy even faster |

Hi aarthi...i have been going thru ur recipes for quiet some time and even tried a few of them....believe me, they have come out really tasty....i have bexome a big fan of ur cooking and especially ur step by step pictorial presentation.... It makez it all the more easy to cook...atta girl...way to go...waiting for many more yummy recipes to fill my families tummy

hi Aarthi, I had tried this recipe, but wanted few clarifications...when the paste ( after blending) was immersed in the pan, it got stuck to the pan and I had a tough time to saute it. Later, when the potatoes were added, it didnt turn out crispy as you have mentioned....NEED your SUGGESTIons on this....
