Potato salad. Definitely the salad I make a beeline to at all picnics, barbecues and potlucks. Often I’m disappointedso, to negate that, I’m usually the one bringing potato salad to the party. This is a super quick, super easy fullyloaded baked potato salad. I baked the potatoes to get that earthy flavour, but you can go ahead and boil them if that’s easier. Potatoes, bacon, cheddar and green onions. I could eat this all. the. time, especially alongside some barbecued jalapeñohoney garlic chicken.Happy weekend friends!
Fully Loaded Baked Potato Salad Recipe
serves 4-6 as a side
- 1 1/2 lbs mini yellow potatoes, scrubbed and forked
- 4 green onions, sliced
- 1/2 pack bacon, cooked and crumbled
- 1/2 cup shredded cheddar
- 1/2 cup mayo, or more to taste
- 1/4 cup sour cream, or more to taste
- salt and freshly ground pepper, to taste
Preheat the oven to 375°F. Bake the potatoes for 40-45 minutes or until soft and cooked through. Remove from the oven, cool until you can comfortably touch and quarter or halve into bite size pieces. Set aside some green onions, bacon and shredded cheddar for garnish. Toss the remainder of the green onions, bacon and cheddar into a large bowl and add the potatoes, mayo and sour cream. Mix until combined, season with salt and pepper to taste and chill. Garnish with the reserved green onions, bacon and cheddar. Enjoy!

I am usually not a huge fan of potato salad, it’s always a little bland to me. This, however, looks bursting with amazing flavor. I will definitely give it a try.

This was delicious. I added 1 pack of ranch dry mix to the mayo and sour cream. Mixed it in a bowl before adding it to the potatoes! Delicious!
