I’m sure you’ve seen them being delivered all over and that you’re a little bit curious, right?

And I don’t know about you, but after a year of almost exclusively eating at home, I’m getting a little over my regular weekly dinner routine.

But if you think it’s too expensive, don’t worry. I have 30 recipes right here that you can make yourself!

By design, they’re quick and easy, using a handful of fresh ingredients to help you get out of that recipe rut.

Some might be familiar, but I bet there are a few that you’ve never tried before. What better time than now?

1. Mozzarella-Crusted Chicken with Blistered Tomatoes and Potato Wedges

It’s amazing what a good title can do! I’m a fan of crusted chicken (with anything, really), but it’s the blistered tomatoes that really got me.

This is such a simple recipe, needing just seven ingredients (two of which are herbs).

The tomatoes and potatoes roast together, and once you have the chicken covered, it will be ready in just 20 minutes.

2. Hearty Steak and Potatoes with Balsamic-Cranberry Pan Sauce

It’s dishes like this that show you just how much effort Hello Fresh has put in. This isn’t your average steak, and it will easily impress on a budget.

It’s already made extra with rosemary addition to the potatoes, but then you’ll also get a wonderful sweet and tangy cabbage mix to brighten up the plate.

When looking for your steak, go for a sirloin to keep the price down. But if you want to splurge, I highly recommend opting for rib eye.

3. Spanish One-Pan Chicken with Chorizo and Bell Peppers

I like to cook it in a big cast-iron skillet and put the whole thing right in the middle of the table, served family-style with plenty of wine and bread.

The chorizo is the crucial ingredient here, so be sure to get a good, dried piece (not the pre-sliced stuff you put on sandwiches!).

Once it starts to cook, the oils will seep into the rice and chicken, flavoring everything and adding lovely color.

4. Sweet Potato and Black Bean Tacos with Avocado Crema

Sweet potato tacos are one of my favorite vegetarian meals. They’re filling, extra sweet, and so pretty laid out on a plate.

Roasting the potatoes will give them great texture and depth of flavor, and I like to add some paprika to mine for a bit of heat.

To make these vegan, try using a dairy-free yogurt alternative in place of the sour cream for the crema.

5. Salsa Verde Chicken Enchiladas with Mexican Cheese & Hot Sauce Crema

I’m a massive fan of poblano peppers. They have a milder flavor but still provide a lovely spice, and they are great roasted and turned into a salsa verde.

This recipe calls for pre-made salsa verde to be added to the chicken and pepper filling, but if you’re buying poblanos anyway, why not make your own?

6. Chicken Pineapple Quesadilla

Depending on your pizza preference, this might be a little controversial!

I really enjoy the sweet pineapple mixed with the salty and spicy chicken, but you can easily leave it out.

Or if you’re just not into pineapple, I can’t recommend mango enough!

7. Tropical Fish Tacos with Mango Cabbage Slaw and Chipotle Crema

For me, tacos are about the whole package. Yes, the fish needs to be perfect, but it’ll be a little bland without some slaw and crema!

This mango and cabbage slaw will completely upgrade your taco game! The crunchy, zesty, sweet addition will enhance the flaky fish perfectly.

8. Sausage and Roasted Bell Pepper Pasta with Creamy Parmesan Garlic Tomato Sauce

Sausage and peppers are such a classic, and I’m used to it inside a giant, toasted hoagie. But over pasta is just as good – if not better!

You’ll be amazed at how quick this is, including making your own sauce using tomato paste, pasta water, and chili.

Add in some sour cream and parmesan for a creamier finish, and you’ll have one helluva filling meal in just about 30 minutes.

When it comes to the sausage, I like to choose something with a bit of spice, and I’ve even used a variety of chicken sausages in the past. It’s totally up to you.

9. Zucchini Pomodoro Penne Bake with Mozzarella & Herbed Ricotta

What better way to get the kids to eat their veggies than to hide them in pasta?

For this recipe, you’ll grate zucchini and mix it in with tomatoes and marinara.

This recipe gets its creamy texture from a seasoned ricotta mix, and the whole thing needs to be baked so the cheese will melt.

10. Italian Garden Veggie Soup with Kale, Pearled Couscous & Garlic Bread

Not only is this soup super hearty and very filling, but you also get a side of garlic bread for a bit of texture.

I know you have a can of crushed tomatoes in the cupboard, and that’s all you’ll need to make the base of this.

If you don’t have carrots, use squash or sweet potatoes. If you’re not a fan of kale, use spinach instead. No couscous? Try out a handful of pasta or orzo.

11. Zucchini & Tomato Flatbreads with Lemon Ricotta, Fresh Herbs, Honey & Chili Flakes

I’m pretty sure the only difference between pizza and flatbread is that the latter doesn’t typically use yeast in the dough.

You can buy flatbread ready-made (or try out seasoned naan for something extra special!) and can top them with pretty much anything.

But I think you’re really going to enjoy this version. The lemon and ricotta base is wonderfully creamy, and the citrus pairs perfectly with the veggies on top.

12. Chipotle-Rubbed Chicken Salad with Pico de Gallo and Avocado

If you’re making a salad, make it over the top and insanely good! No more boring, bland chicken with watery lettuce and a few sad slices of cucumber, please!

You’ll need to buy a can of chipotles for this, using the sauce inside to infuse the chicken with fantastic spice and flavor.

Between the nutrient-rich black bean mix and the quick pico de gallo, you’ll fight for that last spoonful!

13. Mexican Chicken and Rice Bowl

This recipe is a perfect two-for-one meal that you can easily double up and have the next day for lunch.

Try it out for dinner, serving up a big bowl of turmeric seasoned rice covered with southwest spiced onions, peppers, and chicken.

For lunch, pack it all into a tortilla and enjoy a spicy and filling burrito.

14. Chicken Gyro Couscous Bowls with Hummus, Tomato-Cucumber Salad, and Creamy Feta Sauce

Much like the recipe above, this is a fantastic dish to double up and serve over a couple of days.

As a bowl, you can serve the za’atar spiced chicken over couscous and top it with dressed-up tomatoes and cucumber.

Don’t forget the insane feta and sour cream drizzle!

The next day, try it served in a pita with plenty of extra hummus!

15. BBQ Cheddar Pork Burgers with Chipotle Aioli & Potato Wedges

This might be my favorite dish on the list! I can’t resist a good BBQ burger, and the chipotle aioli just pushes the whole thing over the top.

Did I forget to mention the BBQ caramelized onions? Yeah, really!

I think the ground pork work so well in this, but, as always, feel free to swap it out.

Beef is always a safe choice, or why not try out some lean turkey burgers?

16. Beefy Taco Casserole with Mixed Green Salad

This lasagna-like dish will make your next Taco Tuesday a breeze.

For this recipe, you’ll be making your beef taco filling using ground beef, a Mexican spice blend, and diced tomatoes.

Layer it up with tortillas and shredded cheese and serve with a simple, fresh salad.

17. Sesame Beef Tacos with Quick-Pickled Veggies and Chili Sour Cream

If you’re getting bored with the usual beef or chicken tacos, you have to try the Korean-inspired tacos.

Ground beef gets cooked with scallions and cabbage for color and texture before being seasoned with soy and sriracha.

As for the pickled veggies, it’s just a matter of combining radishes, cucumber, vinegar, and sugar with salt and pepper to taste.

Let it sit while you cook the beef, and it’ll be tangy, crunchy, and perfect.

18. Pork and Veggie Bibimbap with Zucchini, Carrots & Jasmine Rice

Bibimbap is a Korean rice dish that can be served with meat and/or veggies.

You’ll make ginger and garlic pork to go over the simple white rice. Ground pork is easier, but if you like it with extra texture, try thin slices of a pork chop.

19. Indian Stuffed Peppers with Curried Beef & Garam Masala-scented Rice

I happen to think these look best when served in the peppers, but it’ll be just as delicious if you slice it all up and serve in a big bowl.

In fact, you could easily serve this like the Mexican burrito bowl from above.

Layer the basmati on the bottom and top it with the peppers and mix of Garam masala spiced beef, carrots, and peas.

20. Curried Cauliflower & Potatoes with Green Peas

One bite of this, and you won’t miss the meat! Between the cauliflower and the potatoes, it’s jam-packed with hearty textures and flavor.

The key to making this dish pop is to add the spices – coriander, cumin, curry powder, and Thai chili – just as the onions go soft.

The heat will help them to release their oils and amp up the flavor.

21. Coconut Curry Chicken with Kale over Basmati Rice

I don’t know about you, but I often find that ‘spice pastes’ can be a bit lacking. That’s why I love this simple coconut curry.

All you’ll need is curry powder, chili flakes, tomato paste, and paprika.

When cooked until fragrant, you’ll add coconut milk for a super creamy and flavorful curry.

22. Sweet & Spicy Szechuan Veggie Stir-Fry with Ginger Bulgur & a Fried Egg

This won’t come as a surprise to you, but this dish needs Szechuan paste to get that rich, deep, spicy flavor.

It’s available in most Asian supermarkets, or you can make your own if you’re feeling adventurous.

Once you have your veggies nicely stir-fried, just pour them right over the bulgur wheat and top with a fried egg – sunny side up!

23. Szechuan Pork & Green Bean Stir-Fry with Candied Peanuts & Jasmine Rice

The prep time for this great takeout classic is just 5 minutes.

You’ll need some of that Szechuan paste again, mixing it with sweet soy glaze to mellow out the heat.

The extra step of candying the peanuts might not be 100% necessary, but the sweet crunch they provide is worth a few minutes more.

24. Pork Katsu with Sesame Roasted Carrots & Ginger Rice

I was so excited to see this on the Hello Fresh website! I’ve been making a version of pork Katsu ever since my trip to Hong Kong.

It’s a Japanese classic and so easy to recreate at home.

You’ll probably find Katsu sauce in the store, but making your own will let you adjust the sweetness.

Believe it or not, it’s just a simple mix of ketchup, Worcestershire sauce, sugar, and soy sauce.

25. Chicken Tabbouleh Bowls with Cilantro & Creamy Feta Sauce

Another day, another vibrant, filling, and healthy grain bowl to keep you full until morning.

I usually use couscous for this, and it’s super flavorful when you mix in the harissa powder. Feel free to use Harissa paste if you have it.

Mix in cucumber, tomato, scallions, cilantro, and feta before topping with juicy grilled chicken.

26. Moo Shu Pork Bowls with Cabbage, Scallions & Buttery Rice

This super-simple dish is a mixture of ground pork and cabbage, with a dressing made of sweet Thai chili sauce, soy glaze, hoisin, and lime juice.

It’s meaty, sweet, tangy, and zesty and can be on the plate in just 15 minutes.

Speed things up using a simple coleslaw mix, or make your own using cabbage, carrots, and scallions.

27. Shrimp and Asparagus Risotto with Meyer Lemon and Parmesan

If you’re scratching your head wondering what a Meyer lemon is, don’t worry – it’s just a fancy hybrid fruit that chefs like to use.

You can easily replace it with half a lemon and half an orange.

Other than that, this recipe is straightforward and super tasty.

The shrimp and asparagus pair so well with the lemony rice, letting you taste all the individual flavors.

28. Chicken Sausage & White Bean Soup with Cheesy Garlic Ciabatta Toasts

If you’ve never tried chicken sausage, I definitely recommend giving it a go!

You’ll get all the great texture of a sausage, with added flavors, and I think they’re even a little leaner.

I love the use of beans in this soup, adding fantastic texture and nutrients into the mix.

It makes the whole thing that much more filling, along with bringing a buttery richness to every bite.

29. Sun-Dried Tomato Spaghetti with Fresh Herbs, Almonds & Parmesan

This recipe is supposedly in the Hello Fresh Hall of Fame – so it must be good!

Instead of a heavy pasta dish loaded with sauce, this recipe keeps it light, using sundried tomatoes, garlic, and a bit of cream cheese to provide the moisture.

Keep it vegetarian-friendly and serve with almonds for crunch, or feel free to throw in some bacon bits and grilled chicken.

30. Mushroom & Chive Risotto Swirled with Garlic Herb Butter

Mushrooms are the star of this dish, and I like to go a little crazy with mine – just get a fun mix, so you get a variety of earthy notes and textures!

Between the risotto, tomatoes, mushrooms, garlic herb butter, and Parmesan, this recipe will be more than enough to fill you up.
